Toffee Bark

So last night after work, I headed over to my sister's house to babysit the kids while she and her husband went to an OFFICE premiere party! The kids and I had a great dinner of rotisserie chicken and steamed broccoli topped with shredded cheddar. But, the best part of the meal was dessert! She has made this toffee bark stuff to take with them to the party, but left us a plate to munch on. This recipe is very simple, and addicting, so I thought I would share!


Toffee Bark
  • Saltine crackers
  • 3/4 c butter
  • 3/4 c. sugar (brown or regular) *she used white, but others have made it with brown sugar
  • 1 (12 oz.) pkg. chocolate chips
  • chopped nuts (any type will work!)
Layer large baking sheet with foil, then with saltines, touching each other. Cook butter and sugar on stove top in saucepan until mixture is thick and boils, stirring constantly, for about 3 minutes, or until it turns a caramel color. Pour over saltines. Bake in 350 degree oven for 8 to 10 minutes. Cool slightly, then sprinkle with chocolate chips. When chocolate is shiny, spread out with dinner knife. (If the chocolate isnt melting - just throw it back into the oven for a little bit) Sprinkle with chopped nuts. Place in freezer for about 30 mins. Remove from freezer and lift out foil. Break into bite size pieces.
Enjoy and try not eating all of this in one sitting. I couldnt stop going back to the fridge for just another "small" piece. Because as everyone knows, when you eat 100 small pieces, it is LESS than eating a few big pieces. :)

Wow, what a trip down memory lane this was for me! My grandma used to make this when I was little but we'd eat them cold! Always from the freezer... And always made with DARK choco... YUM! Sweet n Savory :) This was such a joy for me! Thank youuuu n have the best Friday EVER! :)
