Spicy Chicken Sausage Veggie CousCous

Ok - sorry for the BORING name - i really cant think of anything to call this! If anyone out there can - please comment and let me know!

So Saturday, I made this awesome dish with a mixture of jalapeno chicken sausage, veggies, and couscous and thought I would post it as a recipe. There are probably a million variations of this that would be good, but this is exactly what I did.

Ingredients:
1 box middle east pine nut couscous (fix according to directions on box-makes about 2 cups)
1 package TJ jalapeno chicken sausage
1 yellow squash
1 tomato
1 cup of fresh, baby leaf spinach
1/2 cup crumbled gorgonzola cheese
Pepper to taste

While preparing the couscous according to package, spray a large frying pan with PAM and add thawed chicken sausage. Heat should be on medium high. Chop yellow squash and tomato. Set tomatoes aside. Add yellow squash and spinach to same pan as chicken sausage. Saute until chicken is browning and the squash are beginning to caramelize. The spinach should also begin to wilt. Remove sausage from pan and slice into 1/4 inch slices. Throw back in the pan. Mix sausage, spinach, and squash together and saute until all looks caramelized and READY. I added fresh ground pepper to the pan a few times during this process. Now you are ready - this only takes about 15 mins to prepare since the sausage is pre-cooked.

Spoon couscous into individual serving bowls and then top with sausage/squash/spinach mixture. Add tomatoes and gorgonzola to taste. mix together and ENJOY.

This was so easy, healthy and tasty! I am sure I will be making different variations of this in the near future! Would be great as a leftover lunch also! Oh and the TJ jalapeno chicken sausage was extremely mild - gave enough flavor, but not a whole lot of kick.

That's a nice combination of flavors - did you think it up? Thought you might be interested in this couscous recipe from France. It's actually Morrocan, but very popular eating here.

hi bricogirl! and thank you - I did come up with the recipe - based on what I had in the house and the ingredients I love! Your couscous dish looks amazing, cant wait to try it...
