Apricot Oatmeal Coconut Bars

Ingredients
- ¾ c margarine (I used half butter)
- 1 ½ tsp baking powder
- ¼ c oatmeal
- 2 tsp cinnamon (I used 1 tsp)
- 1 ¼ c flour
- 1 c apricot preserves (or peach, fig, anything!)
- ½ c sugar
- ¾ c coconut
- Preheat oven to 350 degrees
- Melt butter in a 13 x 9” pan in oven while it is pre-heating.
- Cool and stir in the oats, flour, sugar, baking powder and cinnamon directly in same pan
- Reserve ½ cup of this crumb mixture in separate bowl
- Firmly press remaining mixture in the pan
- Spread fruit preserves to within ½” of edges
- Sprinkle with reserved crumbs and coconut
- Bake 25 minutes
- Cool, cut into bars
