Apricot Oatmeal Coconut Bars

(recipe courtesy of athlEAT MOM)


Ingredients

  • ¾ c margarine (I used half butter)
  • 1 ½ tsp baking powder
  • ¼ c oatmeal
  • 2 tsp cinnamon (I used 1 tsp)
  • 1 ¼ c flour
  • 1 c apricot preserves (or peach, fig, anything!)
  • ½ c sugar
  • ¾ c coconut
Directions

  1. Preheat oven to 350 degrees
  2. Melt butter in a 13 x 9” pan in oven while it is pre-heating.
  3. Cool and stir in the oats, flour, sugar, baking powder and cinnamon directly in same pan
  4. Reserve ½ cup of this crumb mixture in separate bowl
  5. Firmly press remaining mixture in the pan
  6. Spread fruit preserves to within ½” of edges
  7. Sprinkle with reserved crumbs and coconut
  8. Bake 25 minutes
  9. Cool, cut into bars
