Frittata Recipe (12.13.2008)

Last night was a first for me. I took a spin class. On a Friday night. Since I took Thursday off, I wanted to get a workout in on Friday. This gym membership thing is really good for me.

The spin class itself was just ok. The girl teaching the class used the microphone and said "up", "down", and "push" waaaay too much. And she would ask us questions about how we were feeling to which a few people in the class liked to scream back "awesome" or "great". This annoyed me for some reason. I like my Monday class alot better. The guy is tough, turns the music way up and doesn't talk much.

After spin, Kevin and I decided we wanted sushi again. This time, we went to Chiu's Sushi which is in Harbor East and where we went on our 2nd date. :)

We discovered the best roll of all time. Lump Crab Meat Roll. It is filled with lump crab meat and then topped with lump crab meat. Any Marylanders (or crab loving folks) out there will agree - unbelievable!We also ordered a Maryland roll and shrimp tempura. For apps, we got the edamame and gyoza. It was all delicious.

This morning we woke up to 30 degree weather with 10 mph winds and Kevin wanted to go for a 9 mile run. I did not want to go for a run. But his motivation helped get me out the door which is really the hardest part in the cold weather.

We did 2.2 miles around the park with Oscar and at one point, I felt like my eyes were literally freezing from the cold wind. Blinking hurt. We made a pit stop back at the house to grab water and by this point, I was hot and wanted to strip all my layers off. I kept going because my hamstring was doing ok. We tried to leave Oscar in the house, but he sprinted out the door after us - he didn't want to stop either. The cold weather is perfect for him, seeing as he was in a fur coat.

Oscar and I turned back after another mile because I was starting to feel my hamstring a bit, so we ended up doing 4 miles. Kevin pressed on with his ipod and did a 9-miler. Good for him! I have to admit that I was jealous and annoyed by the fact that my hamstring was holding me back - ugh! I guess I am just being impatient with this whole healing process...

I decided to try making some frittatas when I got back.

Ingredients

  • 2 eggs
  • 4 egg whites
  • splash of skim milk
  • turkey bacon, cooked and chopped
  • handful of baby spinach, coarsely chopped
  • 1/4 cup onion, finely chopped
  • 1/4 cup shredded cheddar
  • ground black pepper
  • ground red pepper
  • pinch of salt
Cook the turkey bacon, blot with paper towels before chopping. Saute onion and spinach in same pan for about 5 minutes over medium heat until spinach is wilted. Pre-heat oven to 350.

Meanwhile, whisk eggs and milk. Season with salt and peppers. Add cooled spinach and onions to egg mixture. Mix in bacon and cheese. Spray muffin pan with PAM, pour in egg mixture - filling almost to the top, as you can see below.Bake in pre-heated oven for 20 mins. Enjoy.These were tasty, easy and pretty healthy. I will definitely be making them again.
Tomorrow, my dad planned a group run in the morning starting from their house, so I am planning to run that. The group is doing 15 miles, but I am going to shoot for 5. That way I will have done 9 miles this weekend too. ;) Afterwards, my mom, grandmom, sister, and I are making Christmas cookies and then I am doing a secret santa dinner with my friends from college at PF Changs. Busy holiday times!

Oh and a quick Oscar/Lucy update. They are BFF.

Sushi Celebration (12.08.2008)

Before I get to last night's celebratory dinner, I wanted to share a delicious salad combination I threw together for lunch yesterday. Sounds a little weird, but it worked. Also had a whole wheat bagel toasted with a light babybel cheese on the side.

  • Baby spinach
  • zucchini, chopped
  • hearts of palm, sliced
  • dates, sliced
  • honey roasted almond slices
  • reduced-fat feta
  • Annie's goddess dressing
Yesterday was a big day for my boyfriend because he hit a goal that he had been working towards ALL YEAR at work. It called for a sushi dinner celebration, but first, we had to go to spin class at the gym. Cant get off track yet...after being so consistent last week.

Did 45 mins of an extremely hard spin class with some of the best music ever! Then I did about 10 mins of abs and stretching.

We hadn't had sushi in awhile, so we decided to head to RA Sushi in Harbor East area of Baltimore.

Started off with a glass of pinot grigio and some pork gyoza that I didn't get a picture of because we were starving. You can see the empty, messy plate in the background. I dripped a bunch of the sauce on the plate.
Have to get the edamame...love this stuff.
My new favorite roll of all-time. King Crab Roll. Crab mix, cucumber, avocado rolled & topped with king crab & served with an asian pesto sauce. It was all about the sauce on this one.
Shrimp Tempura Roll. This one had asparagus in it and was good, but not my favorite.
Tootsy Maki Roll. Crab mix, shrimp, and cucumber rolled & topped with crunchy tempura flakes & drizzled with a sweet eel sauce.
We also had one other roll that I swear I took a picture of, but cant seem to find it. Of course I can't remember the name either. Sorry about that, but I do remember the decadent dessert we had. Oh man - this was incredible. A banana, stuffed with chocolate, flash fried - served with green tea ice cream. WHOA. It was fantastic. But wait, the banana and green tea ice cream make it healthy, right? ;)
This morning I woke up with enough time to pack lunches because I needed to use up some of the veggies we had on the verge of going bad. I quickly chopped up zucchini, yellow squash, and red pepper to saute with a little PAM over medium-high heat. Added lots of fresh ground black and red pepper.
Meanwhile, I cooked up the extremely quick pinenut couscous. (NearEast brand) It literally takes 5 mins.
I combined the veggies and couscous, but also added some leftover sliced, grilled chicken and reduced-fat feta cheese.
I am counting down the minutes until lunch and I can enjoy this.
Also had enough time to prepare some quick oatmeal.
  • 1/2 c oats
  • 3/4 c skim milk
  • raisins
  • sliced almonds
  • cinnamon
  • agave nectar
  • sliced banana
  • spoonful of almond butter
Some of you left comments about the Trader Joes almond butter being watery and I agree - it needs salt and is too watery. But now I need to get through this jar before buying another type. Maybe I should use it in a recipe. I think I remember someone out there making a banana/almond butter bread combo, so I now I just have to find it. Or maybe almond butter cookies? I havent baked in weeks.
Anyone have a good recipe using almond butter?

20 miles, 2 new restaurants, the beach and a baby shower/party

The subject of this post just about sums up my weekend, so hope everyone has a good night - see you tomorrow! I am so funny sometimes.

Where to start? How about Friday night's pasta dinner OUT? We wanted to stay local, low-key and try to keep it on the cheaper side. Pasta Mista recently opened in the refurbished Brewer's Hill area and was close enough to walk which was perfect since it was a beautiful night. It was about a 15 min walk and I was worried that we should have driven since we did have to run 20 miles in the morning. Didnt want my legs all tired out! But it ended up being fine - sometimes I am a worry wort.

Pasta Mista is more known for their pizza (they have a location up in Towson area), so we had to try a slice. I ate about half of this and it was good - will definitely have to order a pizza at some point. They had a bunch of crazy varieties - one pizza I saw had tortellini on top!!I decided to make my own pasta combo and went with spaghetti with grilled chicken and rose sauce. It looked pretty when it came out, but in all honesty, this sauce was horrible. It was extremely salty and I could barely get any of it down. The chicken was not freshly grilled and seemed like it came out of a frozen chicken tender box. Thankfully, Kevin ordered the lasagna which was very good and HUGE, so I had a bunch of bites.Afterwards, we needed something sweet and decided to head to Rita's Italian ice. They had a new italian ice flavor - Pumpkin Spice - which was GREAT. I got a small pumpkin spice gelati, so it had some frozen custard on top and bottom. yum. I ate about half until I was freezing and full. We almost turned the heat on in the car as we ate this.Now onto the 20 mile training run recap. Started with my normal breakfast of half a banana and ww potato bread with almond butter and honey. (no pictures - was too early to think straight) On the way to the start of the run, I ate half a mojo mixed nuts that was ok, but I think i need the chocolate or peanut butter chips in there.

It was a perfect running morning - we were cold leaving the house at 6ish, which was a great sign. Kevin and I met my father (check out his running blog that his friend set up for him - has some good treadmill workouts) and his friend at 7am in columbia - they were going to run the first 6-10 with us. We planned to do a Galloway method type training run, so we would run 11 mins, walk 2 mins. My dad was keeping the time (I forgot to wear my watch), so when he and his friend peeled off from us, we went by the mileage for our walks.

During the run, I carried a water bottle and filled it up at our pre-arranged water stops with a mixture of powerade and water. This worked well because i always feel like the powerade and gatorade is too strong right out of the bottle. I also cant wear anything on my back or waist when running - it just bothers me for long periods of time. So carrying a bottle, for me, is best!Throughout the run and at water stops, I ate two mini snickers with almonds, a few runner jelly beans, a few bites of a banana, and a clif shot block. I also took two advil at mile 11.5. My left hamstring was starting to hurt - not sure why, but the advil and some stretching breaks helped. Kevin and I both felt great overall and we finished strong going up some big hills to finish. It was a solid last-long training run, that left me feeling confident for the marathon in 3 weeks!!! what a difference the weather makes - wow. Please start thinking positive/praying for good weather on marathon day - please, please, please!

Here is me after the run - I was feeling good - wearing my Bagel to Beer shirt! Oh and I wear lacrosse shorts instead of the typical running shorts because for some reason the running shorts just dont work for me. Even though I didnt play lacrosse ever - played soccer in college, so yeah - who knows, but they work!Afterwards, we rewarded ourselves with turkey sausage, egg, and cheese on an asiago bagel from Einstein Brothers. SO good. love that place.I also ordered, what I thought was an iced caramel skim latte. Well, here is what I got and it was so sickly sweet, I couldnt drink much of it. Kevin was happy about this mistake because he got to have my leftovers!We quickly packed up and were off to the beach for our friends, Neely and Ryan's baby shower in Ocean City, MD. They recently moved there from Baltimore and bought this cool restaurant/bar on 28th street. more about that below. I brought a cinnamon roll larabar and lots of water for the road.Here is me being dangerous and taking a quick picture while driving. Dont tell anyone. ;)So once we made it to OC, (its about 2.5 hours away) we quickly headed over to Mother's Cantina, the restaurant/bar that Neely and Ryan recently bought. It is a tex-mex theme and they have kept the menu the same as the previous owners, but completely changed the ingredients and recipes to ensure everything is high quality, fresh, and delicious. They said that they plan to change the menu around November to make it more their own. I loved the food and started out making a nacho/taco salad with all the food they had out for the baby shower. I loaded my plate with tortilla chips, lettuce, pico de gallo, chicken, cheese, and some black beans. I was so hungry that I completely forgot to take a picture - sorry!

But, I did take a picture of the fresh guacamole with chips we ordered later. This is after we had been eating it for awhile, so it doesnt look quite as pretty as when it came out, but it was so tasty and a huge portion!I had a very strong (good) margarita, drank a few (maybe more than a few) beers, and sipped on a few shots. Yes, I have gotten to the point where I sip my shots - that means I am old, I know. :) We had a great night hanging out with everyone and celebrating the new baby that is due to arrive on Halloween! Oh and did I mention how great the prices are at Mother's Cantina? Happy hour is every day from 4-7 and you can get $1 tacos, $3.50 margaritas and some other good stuff! It is a great place that I know will do well!Check out this picture of a late night queso taco that my boyfriend made for me. soo sweet. ;)wow - this is long. But I am almost done...promise. if anyone is still even reading this.

Sunday morning I had corn flakes with sliced banana and skim milk for breakfast. Thanks to my sister, who had bought some milk when they got down on friday night. I found the corn flakes in the pantry - the mini boxes, so they were definitely fresh. Havent had these in awhile and they were good. Oh and I love these bowls that my mom recently got for the place and wanted to steal them for my house. Seriously, it makes the picture look so much nicer!Later that morning - we decided to take a walk down to Bagels and Buns to grab a mid-morning snack. I ordered a whole wheat bagel with PB and jelly and ate half. Saved the rest for later.

Lunch was another great meal at Mother's Cantina where I had a $5 chicken quesadilla - they have sunday football specials! It was so fresh and good - one of the best I have ever had - no lie. It is also nice to know/trust the people making the food - you know it is going to be good! Here is my blurry cell phone picture. It was huge, so I only ate half of this.Later that day, I had the rest of my bagel with PB and Jelly. We were going to go kayaking - but then we got outside and felt really cold and slightly hungover and decided that we wanted to be lazy and not do anything. I know - lame.

On the way home, kevin and I split a coconut creme pie larabar that was the best. It was chewier/moister than others I have had and I loved it.The best part about driving back from the beach is all the cool produce stands and antique shops. We stopped by a produce stand (Guy Farms) to grab some stuff and I snapped this picture that to me, IS FALL. Look at all these awesome gourds!I grabbed corn, spaghetti squash, zucchini, peaches, tomatoes, and best of all - pumpkin butter!We ate dinner at Kevin's family's house and had the corn with hamburgers, watermelon, and mac&cheese. I am not a big hamburger person, so I had half of a small one with cheese. Had a little mac and cheese and two ears of corn. The corn was great! (sorry, no pics)

Ok - this is long enough, but I did have to try the pumpkin butter when i got home, so I had it with almond butter on a piece of ww potato bread. yummmm.whew - i am caught up! :) Good night!!!

Birthday Weekend - Part 1

After last night's eating adventures, I woke up and wasnt really hungry at all. And this is odd for me to say. But I knew I wanted to grab an iced coffee from High Grounds on the corner. About a week ago, this awesome coffee shop was robbed at gun point in the middle of a saturday afternoon. This hits very close to home because I literally live about 5 houses down from the corner coffee shop. All the more reason to go in, hang out, drink some coffee and let the "bad guys" know that they cant take over our part of town. So I ordered a medium, iced, skinny, caramel latte - seriously the best I have ever had. Probably because they roast their own coffee beans right there!

I packed breakfast to go and once I got to work, I added in some hot water to my 1/2 cup oats, 1 small banana, raisins, almonds, a little SF maple syrup, and a packet of barney butter. It was alot and took me awhile to eat it all.
For my mid-morning snack, which i wasnt ready for until about 11am, I had half a cherry pie larabar. Yes - half! Seriously, something was wrong with me today. But I want to try and listen to myself and not eat just to eat. So I stored the rest for later.Since I didnt pack a lunch, I headed over to Buon Giorno and got their lunch special, which was a grilled chicken caesar wrap. It came with chips and a drink - all for $6.95 - which I think is cheap! sorry for the bad quality - used my phone to grab a picture. I didnt eat the chips - just really didnt want them, so I stowed them in my desk for another time.Later in the afternoon, I opened up another 1/2 cup tupperware thing that contained roasted plantain chips (from TJs) and some dark chocolate covered raisins. I didnt finish the container because i just wasnt that hungry. (horrible picture - my camera died immediately after this!) Once home from work, I had one of these cute little babybel cheese - they are so good. Oh and oscar had a little piece too.
Tonight, we celebrated my dad's birthday by heading to Nichi Bei Kai in Columbia, MD which is a Japanese Steakhouse and sushi place. Never had the sushi, but have been there a few times for the hibachi style dinners. We had our own table in front of the big grill, so we got to sit there and watch our entertaining chef, cook our food. He decided to pick on me from the start and literally hit me in the head with a piece of onion (without giving any notice he was going to throw it) and then threw a piece of shrimp at my eye. It was all in good fun - this guy just couldnt throw. ;)

Here is my first glass of pinot grigio - notice the frosted glass...love it. I had another, but forgot to take a picture. They gave a good, BIG, glass of wine.
I ordered the steak and scallop hibachi meal which came with japanese onion soup, salad with house dressing, 3 pieces of hibachi shrimp appetizer, and then hibachi veges with steamed rice. Overall - a TON of food.
The soup was so good, with pieces of green onions and mushrooms hanging out in a light broth. As you can see, I scarfed it down before taking my picture!
The salad's veges were pretty fresh and the dressing had a ginger sesame flavor that wasnt too overpowering. It got to be a little watery in the bottom - so overall - this little salad was just OK.Shrimp appetizer is some amazing sauce - these were cooked perfectly.
Here is a shot of my plate. I probably ate about half of the meat and veges with a few spoonfuls of rice - but all the scallops were definitely gone!
They brought out a slice of cheesecake and sang for my dad, so of course, i had a bite of the cheesecake!

Oh, did I mention that the kid's meal is fried rice with hot dog? how awesome is that? Jenna was nice enough to share a few bites with me! It was SO GOOD.Here is a pic of the onion volcano! Please notice the stray piece of onion laying on my plate - this has just bounced off my forehead. yesss.And here is the family enjoying the show.Back at Kimberly and Steve's house, we had mom's homemade cherry pie with ice cream and some of the leftover cake dad's work had given him today. There was also a strawberry/mango pie from WEIS, so I had a bite of the mango. Anyone notice a pattern here? I always have to try at least a bite of everything!! :)

Oh, and I had a small glass of milk - i love my sister's milk glasses - perfect size and shape.Needless to say, i am very full and exhausted. Thank goodness the 1/2 marathon was postponed until sunday!!! The weather that is coming through is supposed to end tomorrow, so we should have a muddy, fun time on sunday! I hope they dont cancel the race!
